Pecan and maple granola

Like my wardrobe changes with the seasons so does my granola :) Warming spices, pure maple syrup and pecan nuts has been my go to granola at the moment and I hope it can be your go to now also.

It's so easy to make granola at home, there really is no need to waste your money on over priced, sugar filled, shop bought alternatives. Six simple ingredients and a bowl is all you need and it can be made in only 20 minutes including oven time, its that easy.

It’s refined sugar free (sweetened with maple syrup), contains healthy fats to keep you full and oats provide a long lasting carbohydrate energy source. It’s the best way to start the day! Add some natural yoghurt to it for some protein and top with whatever fruits you love, my favourites right now are apples, pears and figs. You've got yourself a 10/10 breakfast.


Pecan and maple granola.

Like your wardrobe changes for each season, so should your granola. Warming spices, pecan nuts and maple syrup, its giving autumn vibes alright!

  • Makes: about 300g (can easily be doubled/tripled)

  • Prep time: 5 mins

  • Total time: 20 mins

  • Dietaries: DF, Vegan

INgredients.

  • 2 Cups oats

  • 1/2 Cup Pecan nuts (roughly chopped)

  • 1/4 Cup Coconut oil

  • 1/4 Maple syrup

  • 1.5 tsp Cinnamon

  • 1 tsp Mixed spice

Instructions.

  1. Preheat the oven to 180°c

  2. Roughly chop the pecans.

  3. Combine all the ingredients in a bowl and mix.

  4. Pour the granola mix onto a lined baking tray and spread to the edges.

  5. Place the tray in the oven for 12-15 mins or until the granola is golden brown.

  6. Remove from the oven and allow to cool completely.

  7. When cool, break the granola up and pour into an airtight container/jar to store.
