Peach & Nectarine Caprese Salad

Peaches and nectarines are among my favourite fruits in the summertime- they are so sweet and pair perfectly with sharper, savoury flavours like cheeses and yoghurts. I love adding them into breakfasts with yoghurt and granola or in a salad with cheeses and fresh summer vegetables.

When grilled on the bbq, peaches and nectarines become sweet and caramelised and when combined with the fresh taste of tomatoes and mozzarella on a bed of sharp rocket and mixed leaves they make the perfect summer salad. A citrusy olive oil dressing cuts through the acidity of the tomatoes and fresh mint and basil enhances the flavours to top it all off.

Not only is it delicious though, it is also nutritionally dense, packed with fibre, vitamins, antioxidants and healthy fats. The base of leafy greens and rocket is high in insoluble fibre, provides vitamins A, B and D and potassium which supports hormone balance, brain function, skin and bone health and digestion. Stone fruits are soluble fibre and provide vitamins A, C and E to promote immune function, reduce inflammation and improve eyesight and the orange in the citrusy dressing provides vitamin C for immune function support. This salad provides a good source of carotenoids in the peaches, nectarines and tomatoes, a type of anti-oxidant which promotes eyesight, skin health and immune function. Lycopene, the carotenoid in tomatoes is not easily absorbed on its own, however, combining the tomatoes which a healthy fat such as extra virgin olive oil helps to increase the absorption of lycopene. It's all about what you can add to increase the nutrient value of your diet not what you should take away!

Peach & Nectarine Caprese Salad.

Sweet and citrusy and made in minutes- it’s a must try side salad for your next summer bbq.

  • Serves 6 to 8 side servings

  • Prep time: 5 minutes

  • Total time: 15 minutes

  • Dietaries: gf, vegetarian

Ingredients.

For the salad:

  • 3 Peaches

  • 3 Nectarines

  • 500g Tomatoes (mixed colours and sizes)

  • 2 Handfuls of Mixed leaves

  • A Handful Rocket

  • 300g Mozzarella

  • 20g Fresh basil

  • 10g Fresh mint

For the dressing:

  • 1/4 Cup Olive oil

  • Juice of half an orange

  • Pinch of salt

  • 10g Finely chopped Basil leaves

  • 5g Finely chopped Mint leaves

Instructions.

  1. Prep your salad by cutting the peaches and nectarines in halves and removing the stones, cut the tomatoes into wedges and slices and cut the mozzarella into slices.

  2. On the bbq or a griddle pan at a medium to high heat, grill the peaches and nectarines- add a little olive oil to the pan or bbq and place the peach and nectarine halves flesh side down- grill until they are caramelised.

  3. Meanwhile plate your salad- a base of mixed leafy greens and rocket, tomatoes and mozzarella.

  4. Add the caramelised peaches and nectarines (cut some of the halves into quarters) in among the tomatoes and mozzarella and top with mint and basil.

  5. For the dressing- add the extra virgin olive oil, juice of half an orange, finely chopped mint and basil and a little salt to a jar and shake to mix.

  6. Pour the dressing over the salad and you are ready to serve.
